Modest yields meant exceptional quality. Layers of hay and floral complexity hide amongst green fruit, yellow stonefruit, quince, brioche and toast. Soft, gentle mousse, rich layers of autolysis and a nutty oxidative element. Punchy freshness. Fantastique!
